EXOTIC DISHES OF AMAZON REGION


AMAZON REGION



The Amazon Region offers many delicious and exotic dishes prepared with freshest products, you'll have an exiting experience.

SECO DE GUANTA

Typical dish of the Ecuadorian Amazon, the "guanta" is a rodent found in the Ecuadorian jungle, its meat is highly sought in this area.

Ingredients:

*. 2 kg guanta meat



*. 1 liter banana vinegar



*. 1 purple onion, finely chopped



*. 2 chopped white onions



*. 2 tablespoons bell pepper



*. 1 chili pepper



*. 2 Crushed garlic



*. 1 tablespoon chopped coriander



*. 4 tablespoons chopped chillangua



*. 2 tablespoons peanuts



*. Salt and pepper to taste



Preparation:

First put the meat in a bowl, then add the vinegar, cover well and leave to stand for 2 hours, apart make a refrito with oil and all the finely chopped ingredients and dressings for 15-20 minutes.

Next, incorporate the meat with the marinade, let it all mix well and cook over low heat until smooth.
Finally serve with rice and fried bananas.

Seco de Guanta


PALMITO CEVICHE

Ingredients:

*. 1 kg palmito (palm heart).


*. 2 tablespoons vegetable oil. 


*. 4 tablespoons tomato sauce (ketchup). 


*. 1 tablespoon mustard. 


*. 1 sliced purple onion. 


*. 1 finely chopped chili pepper.


*. 1 cup finely chopped coriander


*. 1 cup finely chopped parsley.
 

*. 1 cup orange juice. 


*. 1 cup fresh lemon juice. 


*. Salt and pepper to taste. 


Preparation:

First cut palmito into medallions and let in a bowl, next add lemon juice, orange juice, onion, coriander, parsley, mustard, ketchup and chopped pepper.

After that add salt and pepper to taste and add the vegetable oil. 

Finally cool and serve with chifles (green banana chips) and tostado (roasted corn.)
